Pricing for Quarter & Half Beef
$4.50 /lb. hanging weight to Sauve Terre Farm (average hanging weight per quarter is 160 lbs. and per half is 325 lbs.)

What is generally included in a quarter beef?
On average, a quarter beef is about 80 lbs. of processed beef, including bones, which fits into four standard paper grocery bags. This is based on about 140 lbs of "hanging weight".
This will include roughly: 35 lbs ground beef, 16 lbs steak, 24 lbs roasts and stew meat, 10 lbs short ribs and beef shanks, 6 lbs soup bones, and 3 lbs liver.

$5 /lb. hanging weight to Sauve Terre Farm (average hanging weight per half is 75 lbs. and per whole is 150 lbs.)

What is generally included in a half hog?
On average, a half hog is about 75 lbs. of processed pork which fits into 3 standard paper grocery bags. This is based on about 75 lbs of "hanging weight".
This will include roughly: 20 pork chops,6 pork steaks, 2 pork roasts, 16-18 lbs. ham, 1 pack neck bones, 1-2 packs spare ribs, 2 pork hocks, roughly 10 lbs. of sausage (your choice: brats, breakfast links, liver sausage, bulk brat), 8 lbs. bacon.
